For the same reason NHL teams have a 3rd jersey. Money. If your club never changes jersey, you have no motivation to buy a new jersey. But, sports fans are notoriously fashion concious, and must have the latest jersey. By changing the design every year, you get a lot of repeat trade.
Football has taken this to new heights. Man Utd have been heavily criticised in the UK media for their continual design changes.
